dc.description.abstract | Bu çalışmada, Türkiye’nin çeşitli bölgelerinden toplanan kara salyangozunda (Helix lucorum) amino asit kompozisyonu araştırılmıştır. Esansiyel aminoasitlerden lösin (785.1±17.4mg/100g) ve liysinin (614.9±17.7mg/100g) en yüksek düzeylerde olduğu görülmüş, bunları sırasıyla, treonin (451.2±15.1 mg/100g), fenilalalin (424.7±5.4mg/100g), valin (416.6±13.2mg/100g), isolosin (376.8±10.7mg/100g) ve histidin (335.5±2.9mg/100g) izlemiştir. Araştırma sonuçları salyangozun proteince zengin (%11.49±0.1) ve iyi bir amino asit kaynağı olduğunu göstermiştir. Araştırmada salyangoz etinde metionine rastlanmamıştır. | tr_TR |
dc.description.abstract | In this study, the amino acid compositions in the flesh of land snail (Helix lucorum) collected in the different region of Turkey were evaluated. The most abundant essential amino acids were leucine (785.1±17.4mg/100g) lysine (614.9±17.7mg/100g) fallowed by threonine (451.2±15.1 mg/100g), phenylalanine (424.7±5.4mg/100g), valine (416.6±13.2mg/100g), ısoleucine (376.8±10.7mg/100g) and histidine (335.5±2.9mg/100g). The results of this study have showed that snails are rich in protein (%11.49±0.1) and good sources of amino acids. There was no methionine in sanil flesh. | en_US |
